LOUISIANA STRAWBERRY AND CREOLE CREAM CHEESE WHIPPED CREAM PARFAIT

Comment:
During strawberry season in Louisiana, trucks selling the sweet berries line the roads. Here, the fresh produce is combined with our Creole cream cheese to create the most loved and refreshing strawberry dish.

Ingredients for Strawberries:
1 quart strawberries, sliced lengthwise
1 cup sugar, or to taste
1 ounce strawberry wine or Grenadine

Method for Strawberries:
In a medium mixing bowl, combine strawberries, sugar and wine or Grenadine. Cover bowl with clear wrap or place mixture into a zipper bag. Place in refrigerator and allow to sit overnight.

Ingredients for Whipped Cream:
½ cup chopped strawberries with natural juice
1 (11.5-ounce) package Bittersweet Plantation Dairy® Creole Cream Cheese
2 cups heavy whipping cream
½ tsp nutmeg
½ tsp cinnamon
¾ cup sugar

Method for Whipped Cream:
In an electric mixer, combine chopped strawberry with natural juice, Creole cream cheese, cream, nutmeg and cinnamon. Whisk on medium-high speed until mixture starts to slightly thicken. Slowly add sugar and beat until very soft peaks form. Be careful to avoid creating a stiff whipped cream. Set aside.

Method for Assembling:
In a parfait glass, layer ¼ cup strawberry mixture and ¼ cup whipped cream. Repeat layers and end with a layer of strawberry mixture. Serve immediately.
